The first Cardenal opened in 1969 in a French-style Porfirian building, and since then they have been faithful to the traditional processes of Mexican food. These processes include simple details that make a big difference: making their own tortillas and bread, the initial presentation of their molcajetes with green sauce, the typical chocolate for breakfast. As they say, the details make the difference.
