Mole de Caderas is a typical dish from Tehuacán, declared an Intangible Cultural Heritage of Puebla on October 18, 2023, and a Mexican tradition of more than 300 years, dating back to the viceregal era, which became a use and custom by maintaining the ritual for the slaughter of goats to this day.
The ritual begins with the transfer of the goats from Oaxaca to Tehuacán; while grazing, they are fed with wild oregano and cazahuate, which keeps their fat levels low and strengthens their muscles. In the last few months, the water is removed and they are salted so that their meat acquires the characteristic flavor of huaxmole, or hip mole.
The Mole de Caderas season runs from mid-October to late November, beginning with the slaughter of goats during the Ethnic Festival of La Matanza. So, if you visit Tehuacán during this time, be sure to try one of the most representative dishes of the Mixteca region.
